Locro Criollo
An Argentinian dinner built around white hominy and pork shoulder — on the table in 180 minutes. It is weeknight cooking that still hits your targets — 37 grams of protein per serving. It scales cleanly if you are cooking for more than one.

Ingredients
- 2 cups White hominy
- 1 lb Pork shoulder
- 1/2 lb Chorizo
- 2 lb Butternut squash
- 1 cup White beans
- 2 Onion
- 2 tbsp Paprika
- 4 Green onions
Steps
- Soak the hominy and beans overnight; this is a national-dish stew and it does not rush.
- Simmer the pork, hominy, and beans 90 minutes, skimming, until the grains begin to burst and thicken the pot.
- Add the squash in chunks and cook 45 minutes more, stirring often — the squash should collapse into the stew.
- Brown the chorizo separately and stir it in at the end with the paprika sizzle.
- Serve in deep bowls with chopped green onion; locro is May 25th in edible form.
