Ingredients
- 2 cups Semolina
- 1 cup Yogurt
- 1 cup Sugar
- 1/2 cup Coconut
- 1/2 cup Butter
- 1 tsp Baking powder
- 1/4 cup Almonds
- 1/3 cup Honey
- 1/2 Lemon
Steps
- Heat the oven to 375°F. Whisk the semolina, yogurt, sugar, coconut, melted butter, and baking powder into a thick batter.
- Spread in a buttered 9-inch pan and score into diamonds with a knife — the cuts guide the syrup later.
- Press an almond into the center of each diamond.
- Bake 30 to 35 minutes, until deep golden at the edges.
- Simmer the honey with lemon juice 5 minutes into a thin syrup.
- Pour the hot syrup over the hot cake — it should hiss and drink it in.
- Cool completely before cutting; basbousa firms as it stands.
