Ingredients
- 2 lb Beef chuck
- 1.5 cups Brown ale
- 1 Yellow onion
- 2 Carrots
- 8 oz Mushrooms
- 1 cup Beef broth
- 1 lb Puff pastry
- 1 Egg
- 2 tbsp All-purpose flour
Steps
- Brown the beef cubes in batches until deeply crusted, then soften the onion, carrots, and mushrooms in the same pot.
- Dust with flour, cook 1 minute, then pour in the ale — it will foam dramatically. Add the broth and simmer covered 90 minutes until the beef is spoon-tender and the sauce is rich and dark.
- Cool the filling completely. A hot filling melts the pastry lid before it ever sees the oven.
- Fill a deep pie dish, lay the puff pastry over the top, crimp the edges, and cut a steam vent. Brush with beaten egg.
- Bake at 400°F for 30 to 35 minutes until the pastry is puffed and deep golden. Serve with mashed potatoes and greens; the gravy situation will take care of itself.
