- 1000 g Cauliflower
- 225 g Mature cheddar
- 3 tbsp Butter
- 3 tbsp All-purpose flour
- 2 cups Milk
- 1 tsp Dijon mustard
- 0.5 cup Breadcrumbs
Steps
- Break the cauliflower into even florets and steam 5 minutes until just tender — they’ll cook more in the oven, and mushy cauliflower is the enemy.
- Make a roux with the butter and flour, whisk in the milk, and simmer into a thick white sauce. Off the heat, melt in most of the cheddar with the mustard, salt, and white pepper.
- Arrange the cauliflower in a buttered dish, pour over the sauce, and top with the remaining cheddar and breadcrumbs.
- Bake at 400°F for 20 to 25 minutes until bubbling and browned on top.
