Ingredients
- 4 Gammon steaks
- 4 Russet potatoes
- 4 Eggs
- 4 cups Vegetable oil
- 200 g Pineapple rings
- 2 tbsp Butter
- 2 cups Peas
Steps
- Soak the gammon steaks in cold water 30 minutes if they’re very salty — modern gammon is milder, but the soak never hurts. Pat dry.
- Fry the chips at 325°F until soft, drain, then refry at 375°F until golden and crisp. Salt immediately.
- Sear the gammon 3 to 4 minutes per side until caramelized at the edges and cooked through. In the last minute, add the pineapple rings to the pan to caramelize.
- Fry the eggs in butter, keeping the yolks runny.
