- 1 cup Milk
- 3 oz Ham
- 2 oz Gruyere cheese
- 1 tbsp Butter
- 1 cup Salad greens
Steps
- Whisk the buckwheat flour, egg, and milk with a pinch of salt into a thin batter; rest 10 minutes so the galettes do not crack.

- Pour in 1/3 cup batter and immediately tilt the pan to spread it edge to edge.
- Cook 2 minutes until the underside is speckled brown, then flip and cook 1 minute more.
- Lay ham and grated gruyere over half, fold the galette over, and cook 1 minute until the cheese melts.
- Repeat with remaining batter, adding butter as needed.
