Ingredients
- 3 cups Rice
- 0.75 lb Dried beef
- 1 Onion
- 4 cloves Garlic
- 2 Tomatoes
- 0.5 cup Parsley
- 3 tbsp Olive oil
- 5 cups Beef stock
- 1.5 tsp Salt
Steps
- Desalt the dried beef by soaking 2 hours, changing the water once — or use leftover churrasco meat, the gaucho’s preferred version. Shred or dice it.
- Crisp the beef in the olive oil until browned at the edges, then add the onion and garlic and cook until golden.
- Stir in the rice, coating every grain, then the chopped tomatoes. Cook 3 minutes until the tomatoes slump.
- Pour in the hot beef stock, bring to a boil, then cover and simmer on low 20 minutes without stirring.
- Rest covered 10 minutes off the heat so the grains finish steaming and stay separate.
