Ingredients
- 1 lb Conch (or chopped mussels)
- 1.5 cups All-purpose flour
- 1 tsp Baking powder
- 1 Egg
- 1 Bell pepper
- 0.5 Yellow onion
- 0.5 Scotch bonnet pepper
- 4 cups Vegetable oil
- 0.5 cup Key lime mayonnaise
Steps
- Tenderize the conch by pounding it thin, then dice it small. Conch is naturally chewy; the pounding and small dice keep the fritters tender.
- Mix the flour, baking powder, egg, and a little water into a thick batter, then fold in the conch, diced pepper, onion, and minced Scotch bonnet. Season well.
- Fry tablespoon-size scoops at 350°F for 3 to 4 minutes, turning, until deep golden and crisp.
- Drain on a rack and salt immediately.
- Serve hot with key lime aioli for dipping. The Bahamian beach-shack classic — sweet conch, crisp crust, cold drink.
