- 1 lb Potatoes
- 0.5 cup All-purpose flour
- 1 Egg
- 0.5 Scotch bonnet pepper
- 1 tsp Fresh thyme
- 3 Scallions
- 3 cups Vegetable oil
Steps
- Soak the salt cod overnight, then boil 10 minutes and flake, checking for bones. Boil the potatoes until tender and mash smooth.
- Mix the fish and potatoes with the flour, beaten egg, minced Scotch bonnet, thyme, and sliced scallions. Season — the cod brings salt, so taste first.
- Form into small patties and chill 15 minutes so they hold together in the oil.
