Ingredients
- 4 Very ripe plantains
- 1 cup Vegetable oil
- 0.5 tsp Sea salt
Steps
- Choose plantains that are nearly black — the blacker the peel, the sweeter the flesh. Yellow plantains make tostones; black plantains make maduros. This distinction matters.
- Slice on a sharp diagonal, 1/2-inch thick. The diagonal cut maximizes the caramelized surface area.
- Fry in 350°F oil for 2 to 3 minutes per side until deep golden with dark caramelized edges. Don’t rush them — the sugars need time to caramelize.
- Drain on a rack and sprinkle with the tiniest pinch of salt while hot. The salt-sweet contrast is what makes them irresistible.
- Serve immediately. Maduros wait for no one — they go from perfect to merely good in about 10 minutes.
