Ingredients

Steps

  1. Scrub the potatoes and cut them skin-on into 1/4-inch sticks — Five Guys fries wear their skins, and the skin is where the potato flavor lives.
  2. Soak in cold water for 30 minutes, then drain and dry thoroughly; surface starch is what makes fries steam instead of crisp.
  3. Toss with the oil and half the Cajun blend, keeping the rest, and the salt, for the finish.
  4. Air-fry at 380°F in a single layer, shaking the basket twice, until deep golden at the tips, 18 to 22 minutes. Oven cooks: 425°F on a preheated sheet pan, flipped once.
  5. While they are hot, hit them with the remaining spice and the salt — seasoning sticks to hot fries and just slides off cold ones.
  6. Serve in a paper-lined cup, overflowing a little. The overflow is not an accident; it is the brand.
