Ingredients
- 1.25 lb Ground beef (93/7)
- 4 Potato burger buns
- 4 slices American cheese
- 1/2 Yellow onion
- 8 slices Dill pickle chips
- 1 tbsp Butter
- 1 tsp Kosher salt
- 1/2 tsp Black pepper
Steps
- Divide the beef into 8 loose balls — do not pack them tight, because a loosely packed ball smashes into a crispier, juicier patty.
- Heat a cast-iron skillet or griddle over high heat until it just starts to smoke, then smash each ball flat with a stiff spatula and hold it for 10 seconds.
- Season hard with salt and pepper and cook 2 minutes; the crust forms fast and flipping early robs you of it.
- Flip, top 4 patties with cheese, stack a plain patty on each cheesy one, and cover 30 seconds so the cheese melts without overcooking the beef.
- Toast the buns cut-side down in the butter until golden, then build: pickles, onion, double patty, crown — Steak ’n Shake serves it naked, so resist the urge to sauce it.
