Ingredients
- 1 lb Pizza dough
- 3/4 cup Crushed tomatoes
- 8 oz Light mozzarella
- 2 oz Turkey pepperoni
- 2 tbsp Grated parmesan
- 2 tbsp Olive oil
- 1 tsp Sugar
- 1 tsp Dried oregano
- 1/2 tsp Garlic powder
Steps
- Oil two 8-inch cake pans generously — that fried-in-oil bottom is the entire personality of pan pizza, so do not skimp.
- Divide the dough in half, press into the pans, and let rise 20 minutes somewhere warm; the dough should look visibly puffier before it goes in.
- Stir the sugar, oregano, and garlic powder into the tomatoes for that familiar sweet Hut-style sauce.
- Cheese first, all the way to the rim, then pepperoni — cheese touching the pan wall caramelizes into the lacy edge that makes pan pizza famous.
- Bake at 475°F for 14 minutes until the bottom is deep golden, then slide the pizza onto the pan lid for 2 minutes so the base sets before you cut.
