Ingredients

Steps

  1. Stir the yeast and 1 teaspoon of the sweetener into the warm water and wait 5 to 10 minutes until it foams — no foam means the yeast is dead, start over.
  2. Mix the flour, protein powder, and remaining sweetener, then add the yeast mixture, egg, yogurt, and melted butter and knead 5 minutes until smooth and elastic.
  3. Cover and let rise in a warm spot 45 minutes, or until doubled; rushing this step costs you the airy crumb.
  4. Roll to 1/2-inch thick, cut 6 rings with a donut cutter (a wide glass and a bottle cap work fine), and let them rest 10 minutes.
  5. Bake at 375°F for 10 to 12 minutes until just golden — they should look pale, not browned.
  6. Whisk the powdered monk fruit, milk, and vanilla into a thin glaze.
  7. Dip each warm donut twice, letting the glaze melt into every crevice, and set on a rack until the shine sets, about 5 minutes.
