Ingredients
- 1 3/4 cups All-purpose flour
- 1 cup Plain nonfat Greek yogurt
- 2 1/4 tsp Instant yeast
- 1/4 cup Warm water
- 1 tbsp Honey
- 1 tsp Fine salt
- 1/4 cup Baking soda
- 1/3 cup Monk fruit sweetener
- 2 tsp Ground cinnamon
- 8 sprays Light butter spray
Steps
- Proof the yeast in the warm water with the honey for 5 minutes until foamy.
- Mix in the yogurt, flour, and salt and knead 5 minutes until the dough is smooth and springs back when poked.
- Cover and rise 30 minutes, then roll the dough into ropes and cut into 1-inch nuggets.
- Bring a wide pot of water to a rolling boil, stir in the baking soda, and boil the nuggets 30 seconds — this alkaline bath is the entire secret to real pretzel chew.
- Lift them out with a slotted spoon, arrange on a parchment-lined sheet, and bake at 425°F for 12 to 14 minutes until deep golden.
- Mist the hot nuggets with the butter spray and toss immediately with the monk fruit and cinnamon while they are still steamy, so the coating sticks.
