Ingredients
- 3 cups All-purpose flour
- 1/4 cup Vanilla protein powder
- 2 1/4 tsp Instant yeast
- 1 cup Warm skim milk
- 3 tbsp Honey
- 1 Egg
- 3 tbsp Light butter
- 1 tsp Fine salt
- 1 tsp Ground cinnamon
- 2 tbsp Powdered monk fruit
Steps
- Stir the yeast into the warm milk (105 to 110°F — hotter kills it) with the honey and wait 5 minutes until foamy.
- Add the flour, protein powder, egg, salt, and 2 tablespoons of the softened butter and knead 8 minutes until smooth and elastic.
- Cover and rise 1 hour, until doubled; a warm, turned-off oven is the perfect proofing box.
- Punch down, divide into 12 even pieces, and roll each into a tight ball so they bake up round and pillowy.
- Rise a second time for 30 minutes — skipping this is how rolls come out dense.
- Bake at 375°F for 12 to 14 minutes until just golden on top.
- Beat the remaining butter with the cinnamon, powdered monk fruit, and a pinch of extra honey flavor, and serve the rolls warm with the butter melting down the sides.
