Fried Boudin Balls

Ingredients
- 1.5 lb Boudin sausage
- 1/2 cup Flour
- 2 Eggs
- 1.5 cups Breadcrumbs
- 1 tsp Cajun seasoning
- 4 cups Neutral oil
- 1/4 cup Creole mustard
Steps
- Squeeze the boudin out of its casings into a bowl and mix well. Chill 20 minutes so it firms up enough to roll.
- Roll into 1.5-inch balls with damp hands. Set up a breading station: flour, beaten egg, then breadcrumbs tossed with Cajun seasoning.
- Dredge each ball through flour, egg, and crumbs, pressing firmly. Chill the breaded balls 10 minutes so the coating sets.
- Heat the oil to 350°F and fry in batches 3 to 4 minutes until deep golden and crisp. Drain on a rack, not paper, to keep them crunchy.
- Serve hot with Creole mustard for dipping. The centers should be steamy and soft against the crisp shell.
