Ingredients
- 1.5 lb Large shrimp
- 1 cup Stone-ground grits
- 4 slices Bacon
- 3 tbsp Butter
- 1 cup Sharp cheddar
- 4 cloves Garlic
- 4 Scallions
- 2 tbsp Lemon juice
- 2 tsp Cajun seasoning
- 1 tsp Hot sauce
Steps
- Cook the grits in salted water low and slow for 25 minutes, stirring often, until thick and creamy. Whisk in the butter and cheddar off the heat; cover to keep warm.
- Crisp the chopped bacon in a skillet, then scoop it out. Sear the seasoned shrimp in the bacon fat 2 minutes per side until just pink.
- Add the garlic to the pan for 30 seconds, then deglaze with lemon juice and a splash of water, scraping up the browned bits into a quick pan sauce.
- Return the shrimp and bacon to the pan, toss in the sauce, and add hot sauce to taste. The whole shrimp step takes under 6 minutes.
- Spoon grits into bowls, top with the shrimp and pan sauce, and finish with scallions.
