- 3 lb Bone-in chicken thighs
- 1/2 cup Flour
- 1/3 cup Vegetable oil
- 2 Yellow onion
- 1 Bell pepper
- 2 ribs Celery
- 4 cloves Garlic
- 3 cups Chicken stock
- 2 tbsp Butter
- 2 tbsp Cajun seasoning
- 1 tsp Thyme
- 3 Scallions

- Season the chicken with Cajun seasoning, dredge in flour, and brown in hot oil in a Dutch oven until golden, about 6 minutes per side. Set aside.
