Ingredients
- 2 lb Boneless chicken thighs
- 28 oz Crushed tomatoes
- 1 Yellow onion
- 1 Bell pepper
- 2 ribs Celery
- 4 cloves Garlic
- 2 tbsp Olive oil
- 2 tbsp Creole seasoning
- 2 Bay leaves
- 1 cup Chicken stock
- 1 tsp Hot sauce
- 4 cups Cooked rice
Steps
- Season the chicken thighs with Creole seasoning and sear in hot oil 5 minutes per side until browned. They will finish in the sauce.
- Soften the onion, bell pepper, celery, and garlic in the same pot 8 minutes, scraping up the browned bits.
- Add the tomatoes, stock, and bay leaves; simmer 15 minutes until the sauce thickens and darkens slightly.
- Return the chicken to the pot and simmer 15 minutes until cooked through and tender. Stir in the hot sauce.
- Slice or shred the chicken into the sauce, discard the bay leaves, and serve over rice.
