Ingredients
- 3 lb Whole chicken
- 0.5 cup Dark soy sauce
- 0.25 cup Light soy sauce
- 0.33 cup Sugar
- 0.25 cup Shaoxing wine
- 3 Star anise
- 1 Cinnamon stick
- 4 slices Fresh ginger
- 4 Scallions
- 2 cups Chicken stock
Steps
- Blanch the chicken in boiling water 3 minutes and rinse. This first wash keeps the braising liquid clean so the final glaze shines.
- Combine both soy sauces, sugar, wine, stock, and all the aromatics in a pot deep enough to hold the chicken. Bring to a boil, stirring until the sugar dissolves.
- Lower in the chicken breast-side down, reduce to a bare simmer, cover, and cook 25 minutes, turning once halfway.
- Turn off the heat and rest the chicken in the liquid 15 minutes. It finishes cooking gently and drinks in the sauce.
- Lift out, brush with a little of the strained braising liquid, and chop through the bone. Serve with rice and a drizzle of the glossy sauce.
