Ingredients
- 0.5 cup Sweet rice
- 0.25 cup Black rice
- 0.25 cup Red beans
- 0.25 cup Lotus seeds
- 2 tbsp Dried longan
- 6 Red dates
- 0.25 cup Rock sugar
- 6 cups Water
Steps
- Soak the red beans and lotus seeds overnight. They are the slowpokes of the pot; everything else catches up.
- Combine all the grains, beans, seeds, and fruit in a heavy pot with the water and bring to a boil.
- Drop to the gentlest simmer, cover ajar, and cook 75 minutes, stirring occasionally. The porridge is done when the beans are creamy and the broth turns silky.
- Stir in the rock sugar until dissolved. Taste: it should be gently sweet, the kind that tastes like breakfast, not dessert.
- Serve warm in bowls. Traditionally eaten on the Laba festival, but it is too good to save for one day a year.
