Ingredients
- 12 oz Chow mein noodles
- 1 lb Shrimp
- 0.5 lb Bok choy
- 2 Carrots
- 2 tbsp Light soy sauce
- 2 tbsp Oyster sauce
- 1 cup Chicken stock
- 1 tbsp Cornstarch
- 3 cloves Garlic
- 0.25 cup Peanut oil
Steps
- Parboil the noodles 2 minutes, drain, and pat very dry. Wet noodles steam; dry noodles crisp.
- Spread the noodles in a hot oiled pan into a thin pancake and fry undisturbed 4 minutes per side until golden and crisp. Slide onto a platter.
- Stir-fry the shrimp 2 minutes until pink; remove. Stir-fry the garlic, carrots, and bok choy 2 minutes.
- Stir the stock, soy, oyster sauce, and cornstarch together and pour in; simmer 2 minutes until the sauce turns glossy and thick. Return the shrimp.
- Pour the saucy stir-fry over the crisp noodle pancake. It should sizzle on contact — the contrast of crackling noodles and silky sauce is the whole dish.
