Ingredients
- 1.5 lb Water spinach
- 2 cubes Fermented tofu
- 5 cloves Garlic
- 3 Dried chiles
- 1 tbsp Light soy sauce
- 1 tbsp Shaoxing wine
- 2 tbsp Peanut oil
Steps
- Wash the water spinach well and shake dry. Separate the hollow stems from the leaves — the stems need a head start.
- Mash the fermented tofu with the wine into a pungent paste. It smells strong; it tastes like heaven.
- Sear the stems in smoking oil 1 minute, then add the leaves, garlic, and chiles. The pile looks enormous and wilts to nothing — that is normal.
- Stir in the fermented tofu paste and soy; toss 1 minute until the greens are just wilted but still bright.
- Serve immediately. Water spinach waits for no one — it goes from perfect to sad in two minutes.
