Ingredients
- 1.5 lb Lotus root
- 1 lb Pork ribs
- 0.25 cup Peanuts
- 6 Red dates
- 4 slices Fresh ginger
- 8 cups Water
- 1 tsp Salt
- 0.5 tsp White pepper
Steps
- Peel the lotus root and cut into thick chunks; drop into water as you go so it does not brown. Blanch the ribs 5 minutes and rinse.
- Combine everything except the salt in a heavy pot, bring to a boil, then drop to the gentlest simmer.
- Simmer 90 minutes, partially covered. The lotus root should turn creamy-soft and the broth sweet and milky.
- Season with salt and white pepper. Skim any fat if you like, or leave it — this is a nourishing soup, not a diet one.
- Serve the broth with the tender lotus root and ribs. Hubei families swear by this soup in winter; one bowl explains why.
