Ingredients
- 1 cup Adzuki beans
- 1 piece Dried tangerine peel
- 0.33 cup Rock sugar
- 6 cups Water
- 0.25 cup Lotus seeds
Steps
- Soak the adzuki beans overnight. They are stubborn; give them the head start.
- Simmer the beans, tangerine peel, and lotus seeds in the water 75 minutes until the beans are completely creamy and starting to break down.
- Fish out the tangerine peel and stir in the rock sugar until dissolved.
- For a thicker soup, mash a ladleful of beans against the pot and stir back in.
