- 1 oz Cheddar

- Turn the oven to broil on high and line a sheet pan with foil. The foil catches drips and makes cleanup easy.
- Drain 1 can tuna very well and flake it into a medium bowl. Fold in 1 tbsp Greek yogurt and 1 celery stalk, finely diced -- the yogurt replaces mayo and keeps the filling light.
- Season with salt and pepper and taste it now: the filling should be bright and well-seasoned before it ever goes under the broiler.
- Pat 6 butter lettuce leaves dry and arrange them cupped-side up on the sheet pan. Dry leaves hold the filling better.
