Ingredients

Steps

  1. Dice 1/2 onion into small pieces. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add 6 oz of ground beef and the onion with 1 teaspoon of Italian seasoning. Break the beef into small crumbles.
  3. Cook 6 to 7 minutes, stirring occasionally, until the beef is deeply browned — that browning is where the flavor lives, so let it sit undisturbed between stirs.
  4. Pour in 1 cup of crushed tomatoes and scrape up any browned bits from the bottom of the pan.
  5. Lower the heat and simmer 15 minutes, until the sauce thickens enough to coat a spoon. Taste and season with salt and pepper.
  6. While the sauce simmers, heat a separate skillet over medium-high heat with a drizzle of oil.
  7. Add 3 cups of zucchini noodles and sauté just 2 minutes, tossing constantly — they go from perfect to soggy fast, so pull them while they still have bite.
  8. Divide the noodles among bowls, ladle over the bolognese, and serve immediately.
