Ingredients
- 28 oz Extra-firm tofu
- 1/3 cup Cornstarch
- 1 Bell pepper
- 2 Jalapeño
- 4 cloves Garlic
- 3 Scallions
- 1 tsp Five-spice
Steps
- Press the tofu under a heavy pan for 15 minutes, then cut into 1-inch cubes — pressing is what lets it crisp instead of sog.
- Toss the cubes in cornstarch, five-spice, and a teaspoon of salt until every face is coated.
- Heat 1/4 inch of oil in a skillet over medium-high until a tofu cube sizzles on contact.
- Fry the tofu in a single layer, turning, until golden on all sides, about 8 minutes total.
- Drain on a wire rack and sprinkle with salt while hot.
- In the same pan, flash-fry the sliced pepper, jalapeño, and garlic for 1 minute until fragrant.
- Return the tofu and toss with the scallions.
- Serve immediately with extra salt and pepper at the table.
