- 2 lb Octopus
- 2 Lemon
- 1/4 cup Olive oil
- 4 cloves Garlic
- 1/2 cup Parsley
- 1 lb Potatoes
- 1 tsp Smoked paprika
Steps
- Simmer the octopus in salted water 40 minutes, until a knife slides into the thickest tentacle with little resistance.
- Drain and pat very dry — moisture is the enemy of char.
- Toss with half the olive oil and plenty of salt.
- Sear on a ripping-hot grill or cast-iron pan 3 minutes per side, until the edges blacken and crisp.
- Meanwhile, boil the potatoes until fork-tender; crush roughly with olive oil, garlic, and paprika.
- Slice the tentacles into bite-sized pieces.
- Arrange over the warm potatoes.
- Finish with lemon juice, lemon zest, and a blizzard of parsley.
