- 3/4 lb Ground beef
- 1 Egg
- 1/3 cup Breadcrumbs
- 1 Onion
- 2 cups Tomato sauce
- 1/2 cup Red wine
- 2 tbsp Parsley
Steps
- Soak the breadcrumbs in a splash of water, squeeze dry, and mix with the meats, egg, half the minced onion, parsley, and plenty of salt — mix gently, just until combined.
- Roll into golf-ball-size meatballs; overworking makes them dense.
- Brown the meatballs in olive oil in batches until crusted all over, about 6 minutes; set aside.
- In the same pan, soften the remaining onion, pour in the wine to deglaze, then add the tomato sauce.
- Return the meatballs to the sauce, cover, and simmer 20 minutes until cooked through and the sauce clings.
- Serve with fried potatoes or bread for mopping.
