Ingredients
- 1 cup Gruyère
- 1/2 cup Butter
- 1 cup Flour
- 4 Eggs

Steps
- Bring the water, butter, and salt to a rolling boil; dump in the flour all at once and stir hard until the dough pulls from the pan into a smooth ball.
- Beat in the eggs one at a time, waiting until each is fully absorbed — the paste should be glossy and fall slowly from the spoon.
- Fold in the grated Gruyère, Dijon, nutmeg, and black pepper.
- Pipe or spoon walnut-sized mounds onto a lined baking sheet, spacing them wide; they puff dramatically.
- Bake at 400°F for 20 to 22 minutes until deeply golden and crisp — do not open the oven for the first 15 minutes or they collapse.
- Cool 5 minutes on the pan; the centers should be hollow and steamy.
