Ingredients
- 3/4 lb Ground beef
- 3/4 lb Ground pork
- 2 slices Day-old bread
- 1 Yellow onion
- 1/4 cup Fresh mint
- 1 tbsp Dried oregano
- 2 Eggs
- 2 tbsp Lemon juice
- 1/4 cup Extra-virgin olive oil
- 2 tsp Salt
Steps
- Soak and squeeze the bread dry, grate the onion, and mix everything gently by hand — the same rule as keftedes: tender hands make tender patties.
- Form 4 thick oval patties and press a shallow dimple in the center of each; the dimple keeps them from puffing into footballs as they cook.
- Brush with olive oil and grill or pan-sear over medium-high heat, 5 minutes per side, until well-crusted and just cooked through. Resist pressing them with the spatula — pressing squeezes out the juice you worked to keep.
- Rest 5 minutes, then serve with lemon wedges, tomato, and pita or lemon potatoes. The mint is the quiet signature — people taste something wonderful and cannot quite name it.
- The patties can be formed a day ahead and refrigerated — cold patties sear with a better crust and hold their shape on the grill.
