Ingredients
- 8 oz Kataifi pastry
- 2 cups Walnuts
- 3/4 cup Unsalted butter
- 2 tsp Ground cinnamon
- 1/4 tsp Ground cloves
- 1.5 cups Sugar
- 1.5 cups Water
- 1 tbsp Lemon juice
- 2 tbsp Honey
Steps
- Thaw the kataifi fully, then fluff the shreds apart with your fingers — compressed shreds bake into a dense mat instead of a crisp nest. Keep it covered with a damp towel as you work.
- Pulse the walnuts with the cinnamon and cloves to a coarse crumb.
- Butter a 9x9 pan. Spread half the kataifi, drizzle with half the melted butter, scatter the nuts evenly, then cover with the remaining kataifi and the rest of the butter, pressing firmly.
- Score into 12 squares and bake at 350°F for 40 to 45 minutes until every strand is deep golden and crisp — pale kataifi is steamed kataifi.
- Simmer the sugar, water, lemon, and honey 10 minutes into a syrup and cool completely. Pour the cold syrup over the hot pastry, rest 3 hours, and serve at room temperature. The crunch should be audible.
