Ingredients
- 1 lb Bread dough
- 2 lb Wine grapes
- 1/3 cup Sugar
- 1/4 cup Olive oil
- 1 tbsp Fresh rosemary
- 1 tsp Coarse salt
Steps
- Press half the dough into an oiled sheet pan in a thin, even layer. Dimple it with your fingertips.
- Scatter half the grapes over the dough and sprinkle with half the sugar. The grapes burst in the oven and candy in their own juice.
- Lay the remaining dough over the top in a rough second layer — it does not need to be neat — and press the edges to seal.
- Top with the rest of the grapes, sugar, rosemary, and salt, and drizzle generously with olive oil.
- Bake at 400°F for 30 to 35 minutes until deeply golden and the grapes are jammy and blistered.
- Cool 15 minutes, cut into squares, and serve warm or at room temperature. Harvest season in a pan.
