Ingredients
- 4 pieces Mochi
- 0.5 lb Chicken thigh
- 1 cup Daikon
- 1 Carrot
- 2 cups Spinach
- 6 cups Dashi
- 2 tbsp Soy sauce
- 1 tsp Salt
- 1 tsp Yuzu peel
Steps
- Toast the mochi until puffed and golden — a toaster oven works, or a dry skillet. They should balloon dramatically.
- Simmer the dashi with the chicken, daikon, and carrot 15 minutes until tender. Season with soy and salt; this Kanto-style clear broth should taste clean and refined.
- Blanch the spinach and squeeze dry.
- Place a mochi cake in each bowl and ladle over the hot soup with chicken and vegetables.
- Garnish with yuzu peel and serve immediately, before the mochi deflates. The first soup of the new year — chewy, savory, and full of promise.
