Ingredients
- 12 oz Soba noodles
- 2 cups Dashi
- 0.5 cup Soy sauce
- 0.5 cup Mirin
- 2 sheets Nori
- 3 Scallions
- 1 tsp Wasabi
- 0.25 cup Grated daikon
Steps
- Simmer the dashi, soy, and mirin 5 minutes into mentsuyu; chill it well. Cold noodles demand cold dip.
- Boil the soba 4 minutes — no longer. Rinse under cold running water, rubbing gently to wash off the starch, then drain on a bamboo mat.
- Shred the nori and slice the scallions; set out the wasabi and daikon in small dishes.
- To eat: dip a small bundle of noodles into the mentsuyu, never soak. Add wasabi or daikon to the dip as you like.
- Finish by pouring the hot soba cooking water into the remaining dip and drinking it as sobayu. The meal ends with soup.
