Ingredients
- 1 Bitter melon
- 14 oz Firm tofu
- 0.5 lb Pork belly
- 3 Eggs
- 0.25 cup Bonito flakes
- 2 tbsp Soy sauce
- 1 tbsp Sake
- 0.5 tsp Salt
- 2 tbsp Peanut oil
Steps
- Halve the goya, scoop out the pith, slice thin, and massage with salt 10 minutes; rinse. This tames the bitterness without erasing it.
- Press the tofu, tear into chunks, and sear until golden on two sides; remove.
- Stir-fry the pork 3 minutes, add the goya 2 minutes, then the tofu, soy, and sake.
- Pour in the beaten eggs and let them set 30 seconds before scrambling loosely through.
- Top with bonito flakes and serve over rice. Okinawan soul food: bitter, savory, and built for hot climates and long lives.
