Ingredients
- 1.5 lb Beef
- 2 Onion
- 3 cups Rice
- 2 cups Dashi
- 0.33 cup Soy sauce
- 0.25 cup Mirin
- 2 tbsp Sugar
- 2 tbsp Sake
- 0.25 cup Pickled ginger
- 1 tsp Shichimi
- 4 Soft eggs
Steps
- Slice the beef paper-thin — partially freeze it first for clean slices. Slice the onions into thick wedges.
- Simmer the dashi, soy, mirin, sugar, and sake; add the onions and cook 5 minutes until soft and sweet.
- Add the beef in batches, simmering just until the pink disappears, about 3 minutes. Overcooked gyudon beef turns to leather.
- Spoon the beef and onions with plenty of the savory broth over hot rice in deep bowls.
- Top with a soft egg, pickled ginger, and shichimi. Sweet-salty, beefy, and ready in half an hour — the weeknight hero.
