Ingredients
- 1 lb Unagi fillets
- 3 cups Rice
- 0.25 cup Soy sauce
- 0.25 cup Mirin
- 2 tbsp Sake
- 3 tbsp Sugar
- 1 tsp Sansho pepper
- 2 tbsp Pickled ginger
- 2 Scallions
- 2 sheets Nori
Steps
- Simmer the soy, mirin, sake, and sugar 5 minutes into a thick, glossy tare. It should coat a spoon.
- Brush the unagi generously with tare and broil 4 minutes until caramelized at the edges, brushing once more halfway.
- Mound hot rice in deep bowls and drizzle with a spoonful of tare — the rice underneath is half the pleasure.
- Lay the unagi over the rice and brush with more tare.
- Dust with sansho pepper and top with scallions, nori, and pickled ginger. Rich, sweet-savory, and worth every penny.
