Ingredients
- 1 cup Shiratamako
- 0.75 cup Sugar
- 1 cup Water
- 1.5 cups Anko
- 0.25 cup Potato starch
- 8 Strawberries
Steps
- Whisk the shiratamako, sugar, and water smooth, then microwave 2 minutes, stir, and microwave 1 minute more until translucent and stretchy. Or steam 15 minutes.
- Dust the counter heavily with potato starch and turn out the hot mochi. It will be sticky and dramatic — work fast.
- Divide into 8, flatten each into a round, and wrap around a strawberry capped with anko, pinching to seal.
- Roll in more starch to prevent sticking. The mochi should be pillowy and just barely sweet.
- Serve the same day. Ichigo daifuku: the strawberry peeking through is half the charm.
