Ingredients
- 3 Red bell peppers
- 1 can Crushed tomatoes
- 1/2 Onion
- 2 cloves Garlic
- 2 cups Vegetable broth
- 1 tbsp Olive oil
Steps
- Heat the oven to 450°F and line a sheet pan with foil.
- Halve and seed the red peppers; roast cut-side down 20–25 minutes until the skins blacken and blister.
- Cover the hot peppers with a bowl for 10 minutes — the steam loosens the skins — then peel.
- Sauté the onion and garlic in olive oil until soft and sweet, about 6 minutes.
- Add the peeled peppers, crushed tomatoes, and broth; simmer 15 minutes.
- Blend until completely silky, working in batches if needed.
- Season with salt, and finish each bowl with a swirl of olive oil.
