Classic Beef Chili
Ground beef does the heavy lifting here, with kidney beans rounding it out. An American dinner that takes 45 minutes, start to finish. It is weeknight cooking that still hits your targets — 77 grams of protein per serving. Leftovers keep well, so it doubles as next-day lunch without any extra work.

Ingredients
- 7 oz Ground beef
- 3/4 cup Kidney beans
- 1 cup Crushed tomatoes
- 1 tbsp Chili powder
- 1/2 Onion
- 2 tbsp Cheddar
Steps
- Heat a large heavy pot or Dutch oven over medium-high heat with a drizzle of oil. Add the ground beef and chopped onion, and season with the chili powder and a pinch of salt.
- Brown 6-8 minutes, breaking the beef into crumbles with a spoon, until no pink remains.
- Stir in the crushed tomatoes and the kidney beans, drained and rinsed. Bring to a gentle boil.
- Reduce to low and simmer uncovered 25-30 minutes, stirring occasionally, until thick enough that a spoon leaves a brief trail.
- Taste and adjust the salt and chili powder at the very end, when the flavors have fully melded.
- Ladle into warm bowls and top with the cheddar.
