Ingredients
- 6 oz Pork tenderloin
- 1/4 cup Cornstarch
- 1/2 cup Pineapple chunks
- 1/2 Bell pepper
- 2 tbsp Rice vinegar
- 2 tbsp Ketchup
Steps
- Cut the pork tenderloin into bite-size pieces and toss with the cornstarch and a pinch of salt until coated.
- Sear the pork in a hot wok or large skillet with a drizzle of oil over high heat, 4-5 minutes, until golden and crisp at the edges. Set aside.
- In the same wok, stir-fry the sliced bell pepper 2 minutes until bright and just tender.
- Add the pineapple chunks, rice vinegar, and ketchup. Simmer 2-3 minutes, until the sauce is glossy and slightly thickened.
- Toss the pork back in for 1 minute, turning until every piece is glazed.
- Taste it. Add a pinch of sugar if you like it sweeter, or a splash more vinegar for tang. Serve right away.
