Ingredients

Steps

  1. Heat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. Divide the pizza dough into 24 walnut-size pieces and roll each quickly into a ball between your palms.
  3. Bring a large pot of water to a boil and stir in the baking soda carefully — it will fizz up, so add it slowly.
  4. Lower the dough bites in batches of 6 with a slotted spoon and boil 30 seconds per batch, flipping once; they should look slightly puffy and feel tacky.
  5. Lift each bite out with the slotted spoon, let it drip a moment, and set it on the prepared pan.
  6. Sprinkle evenly with the coarse salt while the bites are still damp so the crystals stick.
  7. Bake 12 to 14 minutes until deeply golden brown with a chewy, glossy crust.
  8. Serve warm with the spicy mustard for dipping; they're best within a few hours of baking.
