- 1 lb Mussels
- 1 Onion

- 4 cloves Garlic
- 1 cup White wine

Steps
- Layer sliced onion, peppers, and tomatoes in the cataplana or a heavy lidded pot — vegetables on the bottom, always.
- Tuck in the garlic and arrange the shellfish over the top; pour in the wine and olive oil.
- Clamp the lid shut and cook over medium heat 12 minutes; the steam does all the work.
- Open to a cloud of fragrant steam; discard any shellfish that stayed shut.
- The vegetables will have collapsed into a sweet, briny broth.
