Ingredients
- 2 oz Smoked salmon
- 1/2 Cucumber
- 2 tbsp Cream cheese
- 1 tsp Dill
- 1/2 tsp Lemon zest
Steps
- Slice 1/2 cucumber into 6 thick coins, about 1/2 inch each, and pat them dry. Thick, dry rounds keep the toppings from sliding off.
- Arrange the cucumber coins on a plate or small serving board.
- Let 2 tbsp cream cheese sit out 5 minutes to soften, then dollop it across the coins. Softened cheese spreads without dragging.
- Tear 2 oz smoked salmon into 6 pieces and drape a piece over each coin in a loose fold -- the folded look is prettier and easier to eat than a flat slab.
- Sprinkle with 1 tsp fresh dill and 1/2 tsp lemon zest, plus a crack of black pepper if you like.
- Serve right away, or cover and chill up to 2 hours in the fridge. Do not assemble too far ahead, or the cucumber weeps water.
