Ingredients
- 1/2 cup Mixed olives
- 1/4 cup Almonds
- 1 tsp Olive oil
- 1/2 tsp Orange zest
Steps
- If your olives are jarred, drain and rinse 1/2 cup mixed olives. Rinsing tames the brine so the olive oil and zest can shine.
- Put the olives and 1/4 cup almonds in a small serving bowl.
- Drizzle with 1 tsp olive oil. It sounds like almost nothing, but the oil carries the zest and makes everything glisten.
- Add 1/2 tsp orange zest -- zest only the colored outer skin, since the white pith underneath is bitter -- and toss well.
- Taste one olive and add a pinch of salt only if needed. Many olives are already salty enough, so taste before you salt.
- If you have 5 spare minutes, let the bowl rest covered at room temperature so the flavors mingle. It is perfectly snackable instantly, too.
