Ingredients
- 2 Eggs
- 1/2 Avocado
- 1 tsp Everything seasoning
Steps
- Lower 2 eggs into a pot of boiling water with a spoon — dropping them in can crack the shells.
- Boil exactly 7 minutes for firm but creamy yolks, then move the eggs to a bowl of ice water for 2 minutes. The cold shock makes them much easier to peel.
- Tap each egg all over on the counter, roll gently to crackle the shell, and peel under running water.
- Halve the eggs lengthwise and arrange cut-side up on a plate.
- Mash 1/2 avocado with a fork, a pinch of salt, and a squeeze of lemon if you have it, then spoon a little onto each egg half.
- Sprinkle 1 teaspoon of everything seasoning over the top and serve. These are best eaten within the hour.
