Marinated Artichoke Hearts
Artichoke hearts does the heavy lifting here, with olive oil rounding it out. A Mediterranean snack that takes 10 minutes, start to finish. It is weeknight cooking that still hits your targets — 3 grams of protein per serving. Naturally vegan and mediterranean, it scales cleanly if you are cooking for more than one.

Ingredients
- 1 can Artichoke hearts
- 3 tbsp Olive oil
- 1/2 Lemon
- 1 tsp Dried oregano
- 1 clove Garlic
Steps
- Drain the artichoke hearts and pat them very dry with paper towels. Dry artichokes absorb the marinade instead of diluting it.
- Halve any large hearts so every piece is bite-size.
- Grate the garlic on a microplane, or mince it superfine, so it melts into the oil rather than sitting in raw chunks.
- Whisk the olive oil, lemon juice, oregano, garlic, and 1/2 teaspoon of salt in a bowl.
- Toss the artichokes in the marinade until every piece glistens.
- Rest at room temperature for at least 10 minutes, 30 is better, tossing once halfway so the flavors soak in evenly.
- Serve with toothpicks, spooning a little of the extra marinade over the top.
